I'd suggest that you use the last 5 days to consolidate your strenghts and to get a sense of your weaknesses, so that on day of the test you'll be more careful on Qs that test your weak areas.
If the Kaplan book you have is the Verbal Workbook, it is a pity you havent worked through it. But if it is the Kaplan GMAT one, then I suppose you could still pick Qs at random and work them out.
I wouldnt advise more than 2 full tests in the last 5 days. The day before GMAT you need to relax.
Have a time strategy for each section (ie., how many Qs you should solve in how much time. Eg: For VA, I had 25-25-25 mins for 13-13-15 Qs.) and try it during the mocks... and decide on a strategy before the test. And stick to it!
