I don't understand the role of "including" in B: "including" implies that the information in first sentence is incomplete and is being supplemented by "including". But I don't agree that information in B is incomplete.
In E, "Others being.." does a good job of listing down supplemental information. However, I am not sure about the "--" punctuation. Why is emphasis needed for supplemental information?
However, "written by Black Americans.." sounds better than "a Black American", so I think B is a better choice than E.
Choice A,C and D are gone because of comparing novels with people. Between B and E, E is more parallel - Richard Wright’s Native Son and Ralph Ellison’s Invisible Man, and Jean Toomer’s Cane IMO it is ok to use “a Black American” to represent the group of Black Americans; consider this: A human is a rational animal – we don’t have to say 'humans are rational animals' This is one of the few befitting cases in which ‘being’ is rightly used
Its B, 1. Novels written by Americans. Plural. Hence C D and E are out. 2. Parallelism is with novels. So Toomer’s ‘Cane’ is compared with ‘Native son’ and ‘Invisible Man’
