MSF programs are not really our area of expertise. However, my advice is that you should investigate carefully what you are hearing from alums. Does what they're saying match the data published by the schools? Can you speak to current students or career advisers to make sure that is still the case? If you determine it will be tough to get a job in the UK, and that is your primary goal of pursuing this program, then I think either deferring or rejecting make sense. Between those, I think a lot depends on your desired long-term location and career focus. The STEM focused degrees do seem to be increasingly popular - schools like USC Marshall are offering STEM certified MBAs in fact.

I am Armenian(non-EU) and have an undergrad from American University of Armenia BA in Business Administration (GPA 3.9, Best Thesis award). I have some local internships (e.g. Central Bank of Armenia) and one year experience in a no-name local consulting firm. I have also founded my own business (unrelated with finance). I have received an offer from LSE MSF and Imperial MSF. After talking to some alums I am under the impression that finding a job in the UK as a non-EU is nearly impossible. My goal is to basically break into the finance industry ( I don't care much about the location). I am looking at three options now. First, to enroll at LSE and do my best to stay in the UK ( I consider my chances highly unlikely). Second, defer my offer for one year -> get some relevant experience (e.g. Big 4) and then pursue LSE with better chances of finding a job. Third, to reject my offer -> get relevant experience for one year and apply to schools in the US that offer STEM degrees. I will very much appreciate if you gave me some advice.
