I choose A. Now, that is why?

The use of "doules/doubling to 250 the junior staff" is much better than that of "doules/doubling to 250 the number of junior staff". In reality, we normally say "300 people" rather than "300 the number of people".

B would be perfect if "the number" is deleted.

Please share your view.

"doubling to 250 the number of junior staff members in the claims department" is unheard of!!! May anyone can help
