I don't know the percentage, but I don't think that it would tell you much anyway.
I think your chance depends on your profile. If you have a very strong profile they will most likely accept you as long as you don't totally screw it up in the interview. On the other hand, your chances are rather slim if your profile is weaker than your peers' so you would have to really wow them during the interview. That being said, I believe that the percentage of admissible candidates that end up getting an offer also strongly depends on the country of origin.

I'm a 20 years old italian student, i got 700 on gmat, 7.5 ielts, i have a 28/30 gpa and i plan to got my degree with 110 cum laude /110.
What do you think? what can i expect?

Jumping in here, but it's hard to say. They look at an overall profile such as volunteer work, extra cocurriculars, work experience etc. While a gmat of 700 is good, do keep in mind that the median is 710.
Since you are clearly successful academically, I'd advise on focusing more on your essays and references.
