I'm no verbal expert, but I noticed a couple of differences that should help.
1. "evidence to suggest" is not idiomatically correct 2. "evidence that suggests" should be correct 3. "and its trunk originally evolved as a kind of snorkel" in the first sentence seems to be an independent clause, and we have to put a comma before it
Can anyone confirm/add to this? Am I wrong somewhere?

1) "Evidence to" is OK idiom 2) "Evidence that" is OK idiom 3) First sentence is not parallel second sentence : that the elephant ........animal and that its trunk......... snorkel. 4) And evidence suggests two facts : elephant is descended from an aquatic animal and its trunk originally evolved as a kind of snorkel, So we need to make the both the clause parallel.
