Thanks for reaching out. Sounds like you are aware you are applying from a well represented demographic! With that in mind, I'm really glad you put in the effort to raise your GMAT, that 740 should put you in a good position. Regarding GPA, there is no perfect conversion and schools are well versed in reviewing transcripts from many countries. Based on what I've seen, your GPA is solid -- not stellar, but shouldn't draw concern (unless there were any failed courses or especially low grades in quant courses).
It sounds like you have some strong details you can include on your work experience. A promotion might help your chances but if not, make sure one of your recommenders speaks to the day-to-day role you take in managing work for the team. It sounds like your ECAs aren't current, so that could be a slightly weaker area, though that is harder to change at this point!
Regarding schools, I think if you execute strong applications, you should have a positive experience with schools like ESADE, Imperial, CEIBS, ISB, NUS. I might give a reach school a shot like INSEAD or HEC or Oxford -- could be challenging, especially if you don't have much international work experience, but it might be worth picking one of that ranking and give it a shot, now that you've got a higher GMAT. But I think your best chances will be at schools on par with those I first mentioned.

B.tech (Mechanical Engineering) from a tier-2 college - 7.84/10 or 70.9% (Tried finding a way to convert it to GPA but, gave up in the end due to a lot of different formulas and different tables available)
12th standard - 70.33%
10th standard - 9.4/10 or 89.30%
Work Experience
37 months in Infosys - Indian IT major
Current designation - Senior Systems Engineer(Might get a promotion in the next quarter)
I am an SAP PI consultant/SAP UI developer with prior experience working as a SAP ABAP Developer.
I have worked on development/implementation projects only(No back-end support work till date)
I have worked on projects related to energy and manufacturing sectors till now(I feel it does not even matter as my work hardly changes from project to project)
I don`t have a leadership role but in the absence of my lead I am the one coordinating the daily activities and dividing tasks among my teammates.
I have also received an award at work recently.
Extra-Curriculars
Was chosen to be a part of the Self-governance team, during the training period at Infosys after undergoing a selection process(A total of 10 people were chosen out of a batch of 450)
