You won't have time to study the entire nova book and mgmat series. Besides, if you're targeting 560+ and you had been scoring 560s in your practice exams, you're all set. Just keep your brain fresh with daily exercises of 20 questions. Take a CAT weekly on the same day you will take the actual gmat. Review all the questions you got wrong and also the ones you were uncertain about. Relax. Get your engines revved up and you'll be good to go.

I think going from 510 to 600 is lot more easier than going from say 660 to 700+ .
I would suggest you to improve your quant basics and brush up your fundamentals. You can go up to 40Q easily and that will take you to 600 i believe. Do lot of quant practice and try and i suggest manhattan materials are good for quants. Practice a lot and you will see the difference.

I didn't like the Kaplan book, PR has some good strategies but again I didn't like their CATs. IMO the best CATS are GMATPrep, MGMAT, and MGHill (though I think I'm the only who likes the latter). G'luck!
