Just curious, does an 800 score on the GMAT always mean a flawless paper? A single mistake and the 800 becomes unachievable?

I'm not completely sure. But it is possible to score a 51Q, 51V and not earn an 800. See this: maybe-next-time-790-51q-51v-91310.html

You can score 800 with quite a few mistakes - 30% of the questions in your test are experimental, and do not impact the score.
