It's tricky to take any sort of new job at this stage of the admissions process since you won't be able to gain any accomplishments between now & when your applications are due - and therefore you won't have much to say about it on your resume or in your essays. The adcom can also see the start of a new job as a potential red flag & can have concerns that either 1) You weren't honest with the new employer (few employers will hire someone who plans to leave in less than a year) OR 2) You're not that serious about b-school if you just took a new job.
Since the company did close , I would use the optional essay to explain that so they understand that this job change was out of your control -- that will help allay some of the concerns.
In terms of the next step & which option would be the strongest, it will depend on a few things. First, you want the job to be relevant to your post-MBA goals, since the idea is to do whatever you can to build a strong foundation for those goals. So you want to be able to point to the skills you'll gain in this next step that will be critical to success in your goals. That could be a reason to take an individual contributor role - the details of your argument would depend on the specifics of this role as well as the connections you can make between it & your ST & LT goals.
In addition, there's that question that will be in the adcom's mind as to whether or not you were honest with the hiring manager. It typically takes at least a year for you to REALLY be able to contribute significantly to a company and the adcom knows that most hiring managers will not hire someone who plans to leave so soon. One option is to take a position at a company that you'd plan to return to following business school. Then you can make the argument that you won't be leaving that company in the lurch. In contrast, you'll be returning post-MBA with the skills to make even more of an impact. Again, if it's a "lesser" role, you don't necessarily need to point that out -- but you will want to speak to the important skills you'll gain in this role that will prep you for your ultimate career goals.
