For students who want to go into management/strategy consulting, what type of courses should they be focusing on in business school? Or it won't matter? I know this question is pretty broad, but I had to start somewhere. If I'm asking the question in a wrong direction, please point it out and I'll clarify a bit more.

Just as your question suggests, I don't have exhaustive answer, but something to start with.
Once you are done with the core courses (or even alongside with those in some schools) you will be able to pick up electives to focus on your area of interest. I bet it's organized differently in each school, it could be by departments or by Knowledge Domains that draw from various Departments, and the names for domains and courses will be different. In GWSB they have these Knowledge Domains. Consulting falls under Strategic Management and Public Policy domain.
