This is not the answer to your question about easier courses, but I would be skeptical about building an "alternative transcript." It's great that you are being proactive about demonstrating your academic capabilities by taking extension courses, but those classes are not held in the same regard as those completed in your undergraduate institution.
You are better off focusing on other elements in your background that are considered high priority. It's not clear from the context of your prompt, but did you do well enough on the GMAT to offset your low GPA? What about the nature of your full-time work? Is it technical enough to show you can handle the rigors of the MBA program?
Do not get me wrong, you are more than welcome to take the extension courses to further your education and demonstrate interest, but I would not go in with the idea that his is somehow going to alter your academic performance, which is baked in and, frankly, unchangeable.
