Dolphins are capable of recognizing themselves in mirrors and of spontaneously grasping the mood or intention of humans.
Is it necessary to use of twice for parallelism? I always thought "dolphins are capable of recognizing themselves and spontaneously grasping the mood of humans" was parallel too and that OF only needed to be used once.
Please help clarify

What you have described is a sequence of events so its flawed?
The statement is trying to provide information about Dolphins capability of recognizing and of grasping....
Your statement says Dolphins are capable of recognizing and (this actions results in) spontaneously grasping. this does not make sense.
