The answer to the 2nd question is certainly "is". Economics is an area of study and it is a singular uncountable noun.
As for the 1st question, I am not happy with that !! "Economic" is an adjective and it is used only before a noun in a singular way (without -s): >> The country has some economic problems.
So, I am not sure if we can say the economics of the trip
1) The economics of the trip (was, were) pleasing. ---Economics is Plural
2) Economics (is,are) an interesting class at the University. --Economics is singular here
Always remember the following rules:
Plural form subjects with a singular meaning take a singular verb.
Plural form subjects with singular or plural meaning take a singular or plural verb, depending on meaning.
Plural form subjects with a plural meaning take a plural verb.
Here, 1. The Economics of the trip were pleasing.
And, 2. Economics is an interesing class at the University.
