Would it be a good idea to send a quick thank you email to one of the admissions staff that I met at a forum? Something along the lines of what I continued to learn about the school, how I plan on visiting the school in the upcoming weeks, and how the school is somewhere I can see my myself?

If the staff member spent some time with you personally and you want to thank the staff member for his/her time sending a short email is reasonable.
