As anyone who has seen my profile knows, ECs are my weak spot. I have lots of outside hobbies and have volunteered in the past, but none of it was in a leadership position. I've noticed writing my essays that because my ECs are so weak, I've been focusing most of my examples on my professional experiences.
In questions that ask about how you will get involved on campus, I've been able to include my interests and a small blurb about involvement in community activities, but other than that....
Anyone have any ideas on how to handle this? (I'm not sure there is a solution)

Are you applying Round 1 or round 2? If round 2, you may still have time. It doesn't have to be that you are on the board of a non-profit. You could pick a cause that's important to you that you may have supported in the past and ties to your story and lead an event for that cause. That should give you sufficient material for your essays.

I think some schools will care more than others. For example, when I look at Tucks app I get the impression they care about ECs. When I look at Columbia - where they removed the passion essay, limited activities discussion to 400 characters and ask career focused questions - I don't think they really care about ECs. I'm not sure which schools your applying to but I thinks some care more than others. Also, I think one of the main things they want from ECs is examples of leadership, so if you have that at work that should somewhat mitigate the problem. One other thing is you're going to need to put in some extra effort to ensure that your app is not boring. I would try to pick the most interesting work stories you can and attempt to write them in the most compelling way possible. And try not to pick one's that are too similar. For example, if every essay is about leading a project team that would get pretty boring.
