I don't know where to begin. I have my GMAT scheduled for less than a week from today, and till now, my accuracy in Hard CR and SC is not up to the mark (at least, I'm not confident I'll be able to reach my target score). My performance in SC and CR has been highly inconsistent, ranging from 40% accuracy to 90%. I am tired of giving so many quizzes and getting this variation in the results. I don't know what will happen on test day. I thought this would be it; I'll be able to achieve my target score this attempt itself, but now I am saturated and want to get it over with.

It's definitely a drag seeing your accuracy fluctuate so much. At the same time there are things you can do to address those issues and achieve high accuracy consistently.
One is to analyze each question you miss to determine why you missed it and address what's going on. If you find that you missed it because of a knowledge gap, then review the topic you weren't clear about. If you find that you missed it because of a flaw in the way you executed. Practice more questions of that type to improve your execution.
Speaking of practicing, another thing you can do to become more consistent is practice verbal in the most effective ways. To learn how to practice verbal in the most effective ways, you can read the following post, which discusses how to practice GMAT verbal for best results.
