POE:

A: Parallelism violated: ONLY a complex gerund phrase or a noun phrase will be parallel to mentioned elements

B: same as A

C: Parallelism maintained BUT Comma + participle structure will not modify the preceding noun (=processed foods). It will modify the entire clause, causing confusion

D: Parallelism maintained BUT Illogical meaning of the phrase: A reduced reliance ON the significant amounts of hidden SODIUM

E: Correct

Following the nutrition board’s advice on salt consumption would mean a virtual end of the use of salt in cooking, an avoidance of obviously salty foods, and reducing the reliance on processed foods that contain significant amounts of often hidden sodium.

A) reducing the reliance on processed foods that contain significant amounts of often hidden sodium -> We have parallel items are "the use of salt in cooking", "an avoidance of obviously salty foods" and "reducing.....". It is not parallel. Incorrect.

B) reducing the reliance on processed foods containing often hidden but significant amounts of sodium- > Same as A. Incorrect.

C) a reduction of the reliance on processed foods, containing as they do often hidden sodium in significant amounts -> "containing as they do" is incorrect.

D) a reduced reliance on the significant amounts of hidden sodium often contained in processed foods -> Meaning changed. Incorrect.

E) a reduced reliance on processed foods that contain significant but often hidden amounts of sodium -> This is better.

So, I think E. :)

Rewriting the original sentence as list items:

Following the nutrition board's advice on salt consumption would mean:
1. a virtual end of the use of salt in cooking,
2. an avoidance of obviously salty foods, and
3. reducing the reliance on processed foods that contain significant amounts of often hidden sodium.

The 3 items in the list needs to be in parallel but it is not in the original sentence. Note, the usage of article a/an in the item 1 and 2, that is missing in item 3. Also note the noun phrases (a virtual end, an avoidance) in the first 2 items, while the item 3 uses -ing verb.

A) reducing the reliance on processed foods that contain significant amounts of often hidden sodium
Parallel error as per the analysis. Eliminate.

B) reducing the reliance on processed foods containing often hidden but significant amounts of sodium
Parallel error as per the analysis. Eliminate.

C) a reduction of the reliance on processed foods, containing as they do often hidden sodium in significant amounts
Idiom error - "reduction in reliance" is the correct idiom. "containing" is not really modifying "processed foods" due to the unnecessary(pronoun) usage of "as they do" and has grammatical flaws. Eliminate

D) a reduced reliance on the significant amounts of hidden sodium often contained in processed foods
Parallel error is fixed, but the intended meaning changes now with the board advice is to reduce the reliance on "significant amounts of sodium" instead of "processed food". Eliminate

E) a reduced reliance on processed foods that contain significant but often hidden amounts of sodium
"a reduced reliance" is the correct required parallel noun phrase, and it maintains the exact meaning of the original sentence.

Hence, choice E is the right answer.
