Thanks for sharing your background, and good for you for thinking ahead in this entire process. Certainly you have a lot of academic strength to your profile through your degrees to date, and once you gain additional full-time experience in your current role you'll likely have more to contribute to the classroom discussions and therefore more to emphasize in your apps as well. You are thinking about the right steps along the way as mentioned. Here are some additional thoughts, suggestions and answers to some of your concerns:
-One of the important facets to emphasize in your app is WHY you still need the MBA after your other Masters. I think you can make that case, focusing on finance or leadership or strategy or other elements you name it, based upon what you think makes sense given your later goals, but just a note that you'll want to do your research and be quite clear on that point.
-The GMAT isn't really 'preferred' over GRE by most schools, BUT a 750 would certainly help your case even more than your current GRE scores so still sounds like a good plan.
-Continue to seek out leadership opportunities in the coming years, both at work and potentially in the community.
-Ensure you have (by the time you apply) a clear short and longer term career plan developed.
-Spend time researching schools you are interested in, visiting, and speaking with multiple students and alumni from each school. Take notes on those conversations-- they may come into plan in your essays or interviews later!
-I wouldn't feel you'd be automatically lumped with all consultants per se, but you will be compared most with the applicants most like you
