A 640 is a strong initial CAT Score. Assuming that you took the FULL CAT and did so in a realistic way, then you you're in a good position to hit your score goal. Many Test Takers spend 3 months (or more) before they hit their 'peak' scores though, so you might need more study time than you've allotted.
While studying, you should plan to take FULL-LENGTH CATs (including the Essay and IR sections) at regular intervals (1 FULL CAT every 1-2 weeks); your current plan does not appear to include those CATs.
1) What were your Quant and Verbal Scaled Scores on this CAT?
2) What is your exact Official Test Date?
3) When are you planning to apply to Business School?
4) What Schools are you planning to apply to?

Since your last CAT was 2 months ago, it would be a good idea for you to take a new FULL-LENGTH CAT (including the Essay and IR sections), so that we can get a sense of your current skills. Once you have that score result, you should report back here.
10 CATs in 9 weeks really isn't necessary - as long as you're taking your CATs in a realistic fashion (that mirrors what you'll face on Test Day) and you take them at regular intervals, then you can take far fewer CATs and be find.

With a test date of April 9, we still have a lot of time at hands.
The first thing I would suggest is to sit for a mock CAT and make sure you take it along with AWA and IR.
We need to understand your current standing as your last mock was 2 months ago.
I feel that your study schedule is fine, provided you stick to it.
The only modification I would make is to accommodate the mock CATs in between and not keep them for the end.
CATs at regular intervals help you identify you weak areas, so that you can work on them.
Also, keep an error log and note down the questions that you have got incorrect. Look out for the solutions of those questions and note any new thing that you find out. Make sure than you revisit this error log frequently.
This will make sure that you do not repeat the same mistake.
