My quant score has improved substantially.Started with a 44 score in Manhattan CAT 1 that increased to 49 in CAT 5. After giving manhattan tests when I transitioned to Gmat prep, Kaplan and gmat club tests, I found them to be much easier and have consistently been scoring 50 or 51.
The problem is Verbal. My scores are wildly fluctuating. The last Gmat prep test I gave, my scores were Q51, V44 770.However the next test I gave (Kaplan this time) my scores were Q50, V35 .I think I am having trouble following the "2 min or quit strategy" that mostly everyone swears by.I get many RC and CR questions wrong when I try to do them in under 2 mins. However If I spend more time (Approx 3 mins) on these questions I am able to get majority of them right. But the problem is that I dont have enough time left for the last 10 ques or so. My Gmat is on the 19th.Any last mins tips to stop this inconsistency??

Try not to compare scores across tests (in this case, GMATPrep and Kaplan).
sukanyar is right: that's a great GMATPrep score. Get a few more data points from the GMATPrep and get some of the other details down (timing strategy, approach, and rest). I haven't heard of the "2 min or quit strategy", and I'm pretty sure that most people take more than 2 minutes on at least a few questions.

But it's not just a few questions.I need time to analyze and solve CR and RC questions.Try to solve them faster and I start getting them wrong. If i take ample time in solving them, I get around 20 correct in the first 25 questions. But not enough time remains for the last 16.Luck then starts dictating my performance.
So because of Verbal my score has been varying from 710 on a bad day to 770 on a good one. Quant is almost always 50 or 51.You think 15 days is enough to stabilize my verbal score to around 40?

Again, this is not unexpected. For example, a lot of people get through SC questions in 30-60 seconds and then take a little longer on RC. But then there will always be some SC questions that take more than a minute (or even two minutes). I've also seen some students do really well on RC with an average time of less than 2 minutes. My point here is that I really don't see how 2 minutes can be a hard stop for every question. You need to go with what works for you.
Do you already have a timing strategy in place? It might be a good idea for you to check the clock after every ten questions or so instead of focusing on maximizing accuracy in the first 25 questions.
