Yes, it should be. However, I would take a week of vacation before the test.

I have been studying for a few months for about 2-3 hours a day, and I plateaued in the high-mid 600's. I was getting really worried I wasn't going to go any further, but I recently stopped working and spent a few entire days studying. Since then, I have been consistently scoring in the mid 700's. I know feel prepared to take the test.

That's a really good plan, and you picked up some great materials. Cracking the GMAT is definitely the one to start with; that's how I started and it gave me a really good foundation. Just stick to your schedule and you will do great.
