As far as I know, OG considers the construction "so X as to Y" wordy and awkward.

See, for example, SC question #212 in GMAT OG 2018 Verbal.

I would choose A.

Can you please share this question? I can’t seem to find it online

The idiom is so + adjective/adverb + as + infinitive

Sure. Here's the question:

The treasury market dropped in response to a decrease in the value of the dollar and to continued concern that the economy might be growing as fast as to accelerate inflation and drive interest rates higher.
A. that the economy might be growing as fast as
B. that the economy might be growing fast enough
C. with the economy’s possibly growing so fast as
D. with the possibility of the economy growing fast enough so as
E. with the possibility of the economy possibly growing fast enough

And here's the OG's explanation of the correct answer (emphasis is mine):

A. As fast as is not the correct idiom.
B. Correct. The possible condition is expressed succinctly using the modal verb might, and idioms are used correctly.
C. Concern with is not the correct idiom; the phrases economy’s possibly growing and so fast as to are wordy and awkward.
D. Concern with is not the correct idiom; the phrase possibility of the economy growing fast enough so as to is wordy and awkward.
E. Concern with is not the correct idiom; possibility and possibly are unnecessarily and awkwardly repetitive.

Goethe's talents as a poet, painter, and dramatist were so diverse they inspired his many fans to refer to him as the "giant of Weimar."

A. so diverse they inspired(correct construction is so x as to y)they referring to talents is also not correct.
B. so diverse as to inspire(correct construction)
C. as diverse as those which inspired(as x as construction is not correct)
D. diverse enough so as to inspire(same as in A)
E. as diverse as to inspire(same as in C)

Choice B is correct.

I agree that concern with is unidiomatic and answer choice C in the example provided actually changes the meaning.

From the example that you shared the answer choice is in this form adjective/adverb + enough + infinitive.

Fast + enough + to accelerate.

Anyone please, let me know whether the usage of "So X as to Y" is correct or not. also, is it correct to use "So X that.." construction with that in it...

Please shed some light on the idiom and its correct usage.

This is the sentence as given:
Goethe's talents were so diverse they inspired his fans to ...
The sentence should have a THAT.

Each of the following would be acceptable:
-Goethe's talents were so diverse THAT they inspired his fans to...
-Goethe's talents were so diverse AS TO INSPIRE his fans to...
-Goethe's talents were diverse enough to inspire his fans to.... (Note the absence of SO)

The second sentence above matches answer choice (B).

To provide some clarity here, “so + cause + that + effect” and “so + cause + as to + effect” are both acceptable, idiomatic constructions for conveying a cause-effect relationship.
