A. Hobbes was impressed by Galileo's descriptions of the mountains on the Moon, the phases of Venus, and the movements of the planets, as well as by biological discoveries, such as the circulation of blood by Harvey, all of which tended to challenge established opinion.
Correct

B. Hobbes was impressed by Galileo's descriptions of the mountains in the Moon, the phases of Venus, and the movements of the planets, or by biological discoveries, such as the circulation of the blood by Harvey, all of which tended to challenge established opinion.
Incorrect
in the Moon is wrong
Hobbes was impressed by X or Y, wrong. Because at the end of the sentence , all of which tended to challenge . so ideally it should be Hobbes was impressed by X and/as well as Y

C. Hobbes was impressed at Galileo's descriptions of the mountains in the Moon, the phases of Venus, and the movements of the planets, as well as by biological discoveries, like the circulation of blood by Harvey, all of which tended to challenge established opinion.
Incorrect
impressed at does not seem right.
Again the same error as B - in the Moon
Additionally , like is used , which is wrong. like cannot be used to state examples .

D. Hobbes was impressed by Galileo's descriptions of the mountains on the Moon, the phases of Venus, and the movements of the planets, as well as by biological discoveries such that the circulation of blood by Harvey, all of which tended to challenge established opinion.
Incorrect
Sentence fragment- the circulation of blood does not have any verb.

E. Hobbes had been impressed by Galileo's descriptions of the mountains on the Moon, the phases of Venus, and the movements of the planets, as well as by biological discoveries, such as the circulation of blood by Harvey, all of which tended to challenge established opinion.
Incorrect
