Most of the times on the SC questions, I find myself picking something that sounds right. 60-70% of the time it IS the right answer but if someone asked me to justify my choice, I wouldn't be able to. I have done the e-gmat SC module and read through the Manhattan SC guide. How do I get a grip on this? I want to be able to really know whats right about the answer I'm choosing.

Using intuition to quickly arrive at the right option, is not a bad thing at all!
But once you've done that, then make sure that the option you chose intuitively conforms to the meaning and grammar standards of GMAT, namely:
i) Is the meaning being preserved/more appropriately depicted?
ii) Grammatically, is the the option correct from a modifiers/pronoun/subject-verb/tense/comparison/idioms perspective?
If the answer to both the above questions is yes, your intuition has served you right:).
But once you've done that, then make sure that the option you chose intuitively conforms to the meaning and grammar standards of GMAT, namely:

Sounds right is not correct way to getting an answer. Either you have good ears or you are just lucky always.
Best way is to get through options, shorten it to 2 or 3 best options,
Take a look on SV, pronouns, modifier issue which can again eliminate 1-2 options.
Getting better on specific rules , which gmat uses would be more helpful than grammar. Although grammar plays a important role. But if you are already strong in it. go for other option
