How long can I wait to apply after GMAT?

Hi,
I have a question regarding how long I can put off appying for business schools after I have taken my GMAT.
My current situation is that I don't have enough work experience to put me into the top 20 schools, and my undergrad grade wasn't that spectacular either, so I am hoping a great GMAT score would help. I plan on taking the GMAT now since I am currently a part-time student (studying Chinese in Taiwan) and part-time worker (tutoring English), so have much more time to study. My plan is to take the GMAT at the end of this year, return to the States shortly thereafter, and work for 2 more years before applying to a business school. I had one full year of work experience as a financial analyst before I left for Taiwan (exactly a year ago). So I had one full year work experience, and about a yr of part-time work/overseas experience.
Now, I know the GMAT score is good for 5 years, but I have also read that schools would rate older scores differently. Would it make a vast difference if I were to apply two years from now with something like a 700 (that I scored this year)? or would it be better for me to retake it then, at the risk of a lower score?
Any input would help!
