Since you've done some work already, you really should take a FULL-LENGTH CAT (including the Essay and IR sections), so that you can establish a 'baseline score' and better define your current strengths and weaknesses. Once you have that score, you should post back here.
Your goal should NOT be to complete all of those CATs before your Official Test Date. In the event that you take the GMAT a second time, you would need some 'fresh' practice materials (so burning through all of those CATs would hinder any additional prep that you might need to do). Since you're still in the early stages of your studies, you also don't need to take a CAT each week. In general, taking a FULL CAT, under realistic conditions, every 1-2 weeks is a good idea (and taking 1 per week as you get closer to your Official Test Date is advisable). Right now, your emphasis should be on your studies - gaining knowledge, practicing Tactics, honing your skills, etc.
