From your example:

X=own species
Y=other species

We have no verb refering to own species, so those has no referent....

Hydrocarbons, with which fruit flies perfume themselves in species-specific blends, are known to be important in courtship, and apparently this assists flies that taste the hydrocarbons on the prospective mates to distinguish their own species from that of others.

In E please let me understand what "their" refers to?

Assist in is the correct idiom...

A and D is out....

B has an akward this, which has no clear referent... + has an ending those of which again has no referent...

C uses which and becomes a bad sentence... courtship assists flies...

E should be correct
