When you take your CATs, it's important to make each of them 'match up' with Test Day in as many ways as possible (so take the FULL CAT - with the Essay and IR sections, take it away from your home, at the same time of day as your Official GMAT, etc.). You should plan to take 1 FULL CAT per week and make sure that you set aside enough time to properly review it.
The study plan you describe appears 'book heavy'; many Test Takers end up getting 'stuck' at a particular score level when using that type of study approach, so you might need to adjust your studies a bit.
