Your CAT scores include one 'outlier' (the 710), which we can't consider the norm. Ignoring your initial CAT (when you had done far less studying than when you took your latter CATs), your "level" appears to be in the low to mid-600s.
I'd like to know a bit more about how you took these CATs:
1) Did you complete the Essay and IR sections EVERY TIME?
2) What time of day did you take each CAT? What time of day is your Official GMAT?
3) Did you take the CATs at your home or some other location?
4) What do you do during the two 8-minute breaks?
The inconsistency in your Verbal scores points to an inconsistency in your tactics. In the Verbal section, how often are you "narrowing it down to 2 choices and then 'guessing'? If that's how you handle most questions, then THAT is a big part of your inconsistency. The OG books are great sources for practice questions but they're not designed to teach you tactics, the common types of wrong answers that show up on Test Day or the little 'secrets' that are built into the GMAT. Depending on your score goals, you might need to invest in some additional resources (and possibly push back your Test Date).
