Depends on which school you are applying for which 640 will be sufficient. There is a school for every score but that also compromises with quality and network you will make from a 640 level program.
Whereas IIMT I read has a very reputable program with state of the art campus what I got to know. It also gives a good network.
But with just 2 years of experience which below par for that specific demographic which generally is 4+ year of work experience, I would suggest you to work for a year and retake the GMAT and then apply because currently your GMAT and work experience, which are the most important component of the application, are weak. As you said " a good school" is a stretch at least for MBA currently.
You can try European schools for other programs.
But if you want to do in this year only, you should go with IIMT.
