If you properly incorporate all three OG books into your studies, then those should be enough for a 600. But don't just passively answer the questions and move on. Time yourself and learn from your mistakes. Understand how each question works. And don't forget to use guidebooks and the GMATPrep!

it depends on how well you are doing now, and how well you can review the ones you got wrong.

I scored a 600 when I first studied by myself using the OG and the Manhattan SC and Numper properties guides
I blindly answered questions and didn't take any initiative to review what was wrong and what was right in my answers. just what was right. So I encourage you to do a full analysis on the questions

Whether the GMAT Official guide will provide enough information and practice questions for you to get to 600 depends on your current knowledge and skill levels, how far you are from 600 at this point, and what you need to do to get to 600.

Apart from what has already been said, even if you do score a 600, it might not be an efficient process.
You could save time in reaching your goal score by going through concept oriented books/courses, and supplementing them with OG questions, rather than by building your concepts working solely on OG problems.

After getting a bit familiar with the material, consider taking an Official Mock to get a sense where you currently stand in relation to your target score.. The Official Mocks are the best questions to practice with but it may be helpful to include 3rd party resources to learn some of the fundamentals.
