GMAC has publicly stated that the Official Score that you earn on Test Day is within +/- 30 points of actual ability. As such, a 740 and 750 are essentially the same 'performance', meaning that if you can earn a 740 then chances are pretty good that you could also earn a 750. Business Schools understand this fact, by the way - so scoring 10 points better or worse on the GMAT would likely not make a difference in the overall strength of your Business School application(s).
If you'd like to know what aspects of the GMAT score a particular Business School puts a priority on, then it's best to research the individual School (and if the information is not available online, then you should contact the Admissions Department and ask). That having been said, Schools tend to place a slightly higher emphasis on the Quant Scaled Score (and some Programs - especially Finance Programs - tend to place a much higher emphasis on it).
