You have an interesting background, and I think that if it is told effectively, your story of switching from IT to the restaurant business can be quite compelling. In your essays, you’ll want to demonstrate what made you make this change and what you have learned from this new role, while ideally illustrating examples of your leadership and impact. It will also be important to discuss why you now want an MBA and what your post-MBA goals are - and why they are realistic based on your background.
As for your GMAT, I suggest taking it 3-4 times as schools will only take your highest score. Your goal should be to exceed the average score of your target school’s GMAT. LBS, for example, has an average of approximately 710.
And finally, you do not need to “prove” your current experience at this point. Though it will be important to choose an appropriate person, and someone who is not in your family, to write your recommendation letter.
