For the Part Time MBA students, should you mention your current employer and title in your student email signature? I guess I should probably also ask if one should even have a formal email signature in their student email.

Yes, formal email signature. Most schools should have a template/format that they prefer you to use.

The Anderson career office / administration might have an official take on your including your current employer in your school email signature, so please do check with them to be sure.

I personally have seen people do this both ways - include and not include depending on the roles they were recruiting for (or if they were even recruiting at all). I have also seen people use their school email signature with only the school info and have their personal email with both school and work information.
