This is helpful - I am taking the GMAT again on 2/3/07-- the app was due on 1/3/07. I was planning to have the scores sent to Cornell again, but didn't know if they take the updated score into consideration. I had included this information in a letter I sent with my application.

Also, once the application is submitted, is it advisable to continue to contact professors or wait now and see if they contact me?

I hope they take time to ask me more because I didn't do as well on my second gmat due to a pen failure - the pen would not work well at all during the verbal section, which is where my score from the 1st to the 2nd test decreased. My score increased on the quantitative by 20%+. I didn't mention this in my essay, although I did address the low GMAT scores.

I can't seem to find much about cornell phd statistics in terms of #of applicants, etc...

I believe Cornell's admission rate is below 3%. If you are in contact with a professor at Cornell, you can tell him/her that you are gonna retake GMAT and ask him/her to wait for your score. After you get the unofficial score on 2/3, you can photocopy and fax it to the school right away.

Good luck.
