Thanks for reporting back on the last question functionality with
MGMAT CATs. That’s the same way GMAT and GMAT Prep work these days (was not the case previously but still the case with AWA).
Anyway, I would absolutely expect that
MGMAT CATs work just like the official test and penalize you for missing a question. About 3 percentile points.

Manhattan prep practice exams? Is this the same on the official exam?
the last question i missed in verbal was a 700-800 level question tho I believe I actually guessed correctly, and the last question i missed in quant was a 500-600 level question. (They were recorded as NA)
would I evaluate my scores in both sections increasing by ~2/3%? Giving me a score more similar to 34/35 (74%) Verbal & 38/39 (37%) Quant? Around a 600-610 rather than 590?
