I know most MM programs are geared towards fresh/2-3 years out of college grads, however I am 8 years out of college. Which MM program would be best suited for me?

I intend to switch careers to consulting and haven't gotten to a top MBA program this year (dinged after 15 interviews). :-D

I honestly don't see any MiM admitting you. You're obviously an MBA candidate and that is where you should focus your efforts.

Well MiM wont be possible, most schools have an age bar at 27-30.
Further others have an experience cap at 1-2 years.

I have just seen LSE which allows you to apply with up to 5 years of work ex.

In your case your best bet would be an MBA or a specialized masters. Maybe you are aiming for very competitive schools?

Take a profile evaluation here, will help us review your case and give some suggestions: http://www.mim-essay.com/mim-profile-evaluation/
