Given the current economic and political instability of UK, will it be wise to move to UK for an MBA program ?
Hi. It is nearly impossible to predict what will happen in 3 years when you would be graduating from a 2-year program. And probably tricky even for predicting what will be the situation in the summer of 2024 for a 1-year program. Heck, I would not be able to predict who would be the PM in the UK a week ago

Things tend to be cyclical, which is why people go to school when things are bad and don't when things are good. Things such as elections, economic downturn, and so on tend to be temporary. Longer term policies tend to have bigger impact such as immigration policy changes, brexit, and such. But equally for both - it is hard to predict what will happen unfortunately. If you had a dream of going to one of the UK's bschools, I would say there is no reason to change it. However, I would recommend making sure you do your research. I am yet to meet a bschool student who complained that they have done way too much research about school, career, country, etc. Usually it is the other way around.
The bottom line is that you should decide where you want to be long term. If you want to be In Europe or the US, it makes no sense to be in the UK no matter the stability. There are some types that say "I am open to all locations" that just means they have not done the research and being lazy, which it is their life and they can be lazy with it but usually lack of interest in one's future is an indicator that people don't think that future is realistic and it is more of a dream, which even they know is a dream and won't happen. Anyway... I am getting too philosophical.
