Both make sense, but the second one sounds potentially more exciting. The first is perfectly normal and pragmatic, but a little less differentiated. Starting a practice is no easy feat but not sure it would make you "jump off the page" to the AdCom at the top schools you listed.

The second, while a little less clear, has a higher ceiling. Any entrepreneurial post-MBA goal needs to have specificity for it to work. You have to lay out a clear hole you want to fill by creating a business based on a clear problem you have identified. It can absolutely be done but definitely carries more risk in that you might come off too generalized or misguided. In short, it's all about the execution.
