Thank you for your post and for sharing your profile. I thought I would chime in here... You have excellent academics and work experience. The schools you are targetting, however, are top programs and getting admitted there is tough for everyone. Top universities want to know that you can succeed in a rigorous environment. Especially since your academic background is not at from a top-tier European university, increasing your GMAT by 10-20 points overall might just show them you can handle the rigor. You might also want to consider diversifying your target to a couple of reach schools, some target, and a few safety schools. When are you scheduled to retake the GMAT? Which round are you considering applying to?
One of the essential aspects of the admissions process applicants often forget is that universities review their profile wholistically. There are a lot of factors considered when reviewed for admission, and telling your story is equally important to the admissions process. Have you begun working on the applications?

Dear team,
It would be great if I could receive some advice/ an assessment of my upcoming B-School application:
Nationality: Eastern European, female 25 yo
Degree: Undergrad & MA in International Economics (Strength: Top 1-2% student at a good state university, GPA 95 out of 100, full merit-based government scholarship; Weakness: few quant classes; school is in Eastern Europe, major in the country but not top rank even in Europe)
GMAT: 700 (Q: 45 / V: 40 / IR: 5); will probably re-take (but not sure I can jump better in 2 weeks :-\ )
Work Experience: ~2 years at Big4 Corporate Finance in Eastern Europe, ~2 years at Big3 Consulting (incl. a project in Western Europe)
Extracurricular: did an exchange year in the US in high school; a lot of various activities during undergrad/grad; some activities currently (mentoring quite a few students)
Post-MBA goal: return to consulting in the short-term
