You should take atleast one right away to know what the official test looks and feels like. Thereon, you should save the official mocks towards the latter end of your preparation.

Since you seem to be just starting out with your prep, I recommend studying for about a week or two to get comfortable with the GMAT's question types and format and then taking your first practice test.
