This is definitely a tough question! At the end of the day, this is just simply a question about what interests you? You can structure your essay but asking and answering the following questions:
Why am I interested in this field? What do I know about it from my own research?
How, if at all, have I pursued this interest prior to applying for the HEC program?
If I am admitted to HEC Montreal, how will I pursue this field of study? What strategies will I deploy that bring out the best in me?
Finally, what will the impact of my studies be on the field? What mark will I leave?
The central idea is that you want to illustrate real passion and enthusiasm for the field of study. It is also okay (if not actually preferred) to think big as these applications require a sense of motivation and purpose to help you stand out.
Is it safe to assume you've come across the below file from HEC Montreal? It is quite detailed (way more so for an essay) but it could be helpful to you in brainstorming ideas for your statement.
