Actually this is how the Japanese really prefer to eat their sashimi. It's called "Ikezukuri" which literally translates to live cut fish. I have seen it done with lobsters too.

here is my personal photo (.mov files are not allowed to post :?: ) of this "moving fish" thing... needless to say, I felt guilty eating it... but it was fresh :roll:
