If you're looking for that step up then stick with Kaplan, you'll hear time and time again that the Kaplan program and books provide a sku'd test result that is usually a little harder than the norm. Also for some harder questions, check out:

Again sticking to what you know but a good option never the less

Thanks so much to nphelan and rajaryan for taking the time to reply. My Kaplan Advantage course came with the OG and a few other materials. I'm just in the math refresher so I'm not sure if I should start the OG now or wait for another 3 more weeks.

I probably will not shoot for the 700 club only because it won't make much of a difference. UCF is the only option due to location and cost limitations. I'm going to work this weekend on a study plan/calendar and research this error log thing.

Also, the questions of the day on the blog... what is the level of those questions? Is this basic GMAT practice or is this meant to challenge people who are probably already looking at 700's?

The OG12 and MGMAT guides are good to get you into the late 600's pushing towards 700. Usually those who surpass 700 focus on answering a lot of the challenging questions asked on these forums and books like Kaplan 800 or MGMAT quant advanced. If you stay on the path you're on now you should hit the 600 mark and get where you want to be.
