Almost anything can be parallel - Not only from nouns, noun phrases, to prepositional phrases But also from relative to independent clauses. So answer to both the questions - YES
if parallelism is bugging u....just chill. forget all the nuances of grammar.....and just have a look at the video on PARALLELISM...from vimeo mgmat."thursdays with ron".....he has simply dissected the concept......I can vouch, it will be worth.

I assume you are asking if "company's" can possess all three items? Yes, in this example (that appears to be incorrect) the company can possess all three items. One way to rewrite the sentence would be: "The Employees were upset by the company's low pay, poor working condition, and insufficient outlets for creativity."
Numbered for clarity: "The Employees were upset by the company's 1) low pay, 2) poor working condition, and 3) insufficient outlets for creativity."
