There are two contrasting ideas here
1. They quickly acknowledge that they don't remember specific information.
2. They rarely accept that this might have may indicate the onset of significant memory problems.
(A) but they rarely acknowledge that these lapses may indicate the onset of significant memory problems. Correct, clearly tells the meaning and keep the || in the sentence.
(B) yet rarely does one acknowledge the possibility of significant memory problems. Who is this one? We should use they or them for people.
(C) but not the possibility of serious memory problems. Grammatically no ||
(D) still we don’t usually acknowledge the fact that this may indicate possible serious memory problems.: Who is we? We are talking people in general, so we should refer to people by they or them, not we.
(E) and they don’t seem to realize that this may indicate the onset of significant memory problems. : No contrast shown
