First of all, a 610 is a great start! Was that from an official MBA.com practice exam? In providing further advice, I’m going to assume you are shooting for a 700+ GMAT score - is that accurate?
Since 2 months is not a ton of time to prep for the GMAT, you definitely need to be motivated and study much as possible each and every day. Furthermore, to to make the most of your prep time, keep your learning focused and organized. Thus, you want to strive for linear, targeted learning. In other words, you want to master one topic before you move to the next.
For example, if you are learning about Number Properties, you should learn everything possible about that topic: LCM, GCF, units digit patterns, divisibility, remainders, etc. After that, be sure that you practice with a lot of questions (50 or more) just on Number Properties. The results of that practice will help you to determine how well you have truly mastered that topic. By following this routine for all the quant topics you should be able to raise your quant score.
For verbal you would want to follow a similar study routine; focus on learning one section at a time: reading comprehension, sentence correction, or critical reasoning. However, since your quant appears to be much weaker than your verbal, you may want to focus a bit more of your study efforts on quant.

In regard to your essays, what are the application dates of the programs to which you plan to apply? Ideally, you might consider wrapping up the GMAT prior to starting essays; however, just ensure that you have enough time to complete your applications prior to the deadlines.
