In terms of the name of the company, I mean it can lend some weight and credibility at times sure. But if it's not a known brand, what you do is include a brief company description in your resume and/or application to explain more about it for the readers.

In terms of changing jobs... depends a lot on the context and how your whole story will make sense to someone reading your application. If you move to a role that you are passionate about and it makes sense to your post-MBA goals, and/or it's a progression of some kind, and/or will provide you with additional leadership/management or other relevant skills, great. But overall I'd say focus on career decisions that make the most sense when you think about your long term career, as opposed to making decisions solely for b-school admission. And be wary of too many job changes within a short period of time especially if not straightforward promotions/progression. Good luck!
