Hi guys! Hoping for some valuable advice 
Background and nationality: Female, Brazilian, 28 yrs old
Bachelor in Economics at one of the top schools in Brazil / Exchange program at IE during college
GMAT: mock tests at 680 (Q48 / V35)
Plan to apply on R1 2022
Work experience and leadership: 1yr internship at equity research (HSBC), then joined General Motors in Brazil (2017) through a carreer acceleration program (TRACK, also exists in US), focused in finance. I'm currently in a leadership position (1yr), and I'm one the youngest females in the region in a finance leadership position. I basically manage a BU P&L and lead the launch of connected services sales in South America countries, working cross functionally with IT, Dev, Accounting, PM. My BU is like a start up inside GM.
Community and others: Nothing really notable / travelling (visited +20 countries)
Post MBA goals: Tech
Target schools: Yale SOM, Ross, Columbia, Darden, Kellogg, Berkeley

You have a great profile from a demographic and work experience standpoint. The biggest areas of concern for those schools are your GMAT score (which is good but is that nebulous 680) and your lack of extracurricular activities.
As for your list, Ross, Darden and Berkeley are good fits. Columbia, Kellogg and Yale SOM are going to be tough. None of these are a given just as they aren't all out of reach.
You might want to add a couple of even lower-ranked schools if you're very focused on getting into school this year. It's just the smart move.
